Pure sesame oil does not require refrigeration and can be safely stored at room temperature. Sesame oil has a high smoke point (around 400–450°F depending on whether it's refined or toasted) and natural antioxidants that help prevent rancidity, making it stable in a cool, dark pantry for extended periods.
However, refrigeration is not harmful and may extend shelf life further, particularly in warm climates or if you live in a very hot environment. Some people refrigerate sesame oil to preserve its flavor and freshness longer, though this can cause it to become thick or cloudy—it will return to normal consistency when warmed to room temperature.
The key storage principles are: keep sesame oil in a tightly sealed bottle away from direct light and heat, and store it in a cool place. An unopened bottle stored properly at room temperature can last 1–2 years or longer. Once opened, use it within 6–12 months for best quality. If you notice the oil smelling rancid or off, discard it.
Toasted sesame oil, which has a darker color and more robust flavor, may benefit slightly more from refrigeration than refined sesame oil, but it's still optional. Choose refrigeration based on your climate and how quickly you plan to use it rather than necessity.
